- For the cake
- 1 cup unsalted butter
- 1 cup caster sugar
- 4 eggs (beaten)
- 2 cups self-rising flour
- 2 unwaxed lemons (finely grated zest and 1 tbsp juice)
- For the icing
- 2 ¼ cups powdered sugar
- 2 Tbsps lemon juice
- To decorate
- sugar sprinkles

1 Small pot mit Deckel, 1 Cutting board, 1 Small knife, 1 Measuring cups, 1 Teaspoon, 1 Tea strainer
Preparation steps

For the cake: heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 20cm|8" square cake tin and line the bases with non-stick baking paper.

Beat the butter and sugar in a mixing bowl until light and fluffy.

Add the eggs, beating well to combine. Add the flour, lemon zest and juice and mix well.

Spoon into the tin and bake for 35-45 minutes until golden and springy to the touch. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
5.
For the icing: sift the icing sugar into a bowl and beat in the lemon juice until smooth. Spread over the top of the cake and sprinkle with the sugar sprinkles. Leave to set.
