- 2 Tbsps sunflower oil
- 2 Tbsps unsalted butter
- thyme
- 2 cloves garlic cloves (crushed)
- 6 large yellow onion (finely sliced)
- ⅔ cup dry white wine
- 5 cups Beef stock
- ½ Baguette (cut into slices)
- 1 ½ cups Gruyere (grated)
- salt
- freshly ground Black pepper
Preparation steps

Heat together the butter and oil in a large, heavy-based saucepan set over a medium heat until hot.

Add the thyme, garlic, onions, and a little salt, sweating for 25-30 minutes until lightly browned. Remove the thyme from the saucepan at this point.

Deglaze the saucepan with white wine, letting it reduce by half. Cover with the stock and cook until simmering.

Pour into a slow cooker, cover with a lid, and cook on a low setting for 4 hours.

Preheat the grill to hot.

Adjust the seasoning of the soup to taste before ladling into serving bowls.
7.
Top with slices of baguette and a generous layer of Gruyere before browning under the grill until the cheesed is bubbling and golden brown in colour.
8.
Carefully remove from the grill and serving immediately.
