- For the base
- 5 ozs Digestive biscuit (crushed to crumbs)
- 0.333 cup unsalted butter (melted)
- For the filling
- 1 ⅔ cups cream cheese
- ½ cup sugar (scant)
- 3 egg yolks
- ½ tsp salt
- 1 cup Sour cream
- 1 Tbsp flour
- ½ Vanilla bean (scraped seeds only)
- 2 tsps grated lemon zest
Preparation steps

Butter a 23cm|9" springform cake tin.

For the base: mix together the biscuit crumbs and melted butter. Press firmly into the base of the tin. Chill while you make the filling.

Heat the oven to 140°C (120° fan) 275°F gas 1.

For the filling: whisk together all the ingredients. Pour onto the biscuit base. Cover the tin with foil and pierce a couple of holes in it.
5.
Bake for about 50 minutes until firm around the outside but with a wobble in the centre. Cool completely in the turned off oven, with the door slightly open.
