Fish provides plenty of healthy fats and protein that are sometimes hard to find in other foods. This meal is light, low in calories, and is a great, healthy dinner that you can serve to dieters and non-dieters alike!
Serve this with a side salad and some bread for the perfect meal.

- 4 skinless Cod (approx. 8 ozeach, pin-boes removed)
- ¼ cup olive oil
- 1 tsp paprika
- 2 Tbsps unsalted butter
- 1 large Zucchini
- 2 cups Chanterelle (brushed clean)
- ½ cup dry white wine
- salt
- peppers
- To garnish
- Chives (finely chopped)
Preparation steps
1.
Preheat the oven to 400°F.

Rub the cod fillets with the olive oil and season well with paprika, salt and pepper.

Arrange on a roasting tray and roast for 10-12 minutes until firm to the touch and opaque in appearance.

Cut the zucchini into ribbons using a vegetable peeler and keep in a bowl of cold water.
5.
Melt the butter in a large frying pan set over a medium heat until foaming before adding the mushrooms and drained courgette.
6.
Sauté for a 2-3 minutes, tossing occasionally until they start to colour before adding the white wine and letting it reduce by half as the vegetables continue to cook and soften.
7.
Remove the fish from the oven and let it rest for a few minutes, covered with aluminium foil to one side.
8.
Spoon the vegetables and any juices from the pan onto serving plates. Sit the cod on top and garnish with chopped chives before serving.
