- 2 Cucumber (each about 300 grams)
- 1 white onion
- ½ l Chicken broth
- 150 grams Crème fraiche
- salt
- freshly ground peppers
- ½ red Bell pepper (finely diced)
- mint
Preparation steps

Peel cucumber, seed, and cut into cubes. Set aside a few cubes to garnish the finished soup. Peel and dice onion. Puree the cucumber and onion together. Heat the chicken broth to just warm. Stir in cucumber puree and creme fraiche. Season with salt and pepper to taste. Refrigerate until chilled.

To serve, ladle into bowls and sprinkle with bell peppers, reserved cucumber cubes, and mint leaves.
