4 Tbsps Oil
1 red chili pepper (finely chopped)
2 cloves garlic cloves (finely chopped)
1 pc freshly grated ginger (4 cm |1 1/2 inch)
7 ozs shrimp
cup fish stock
salt
freshly ground Black pepper
2 pinches Chili powder
2 Tbsps soy sauce
1 Tbsp Oyster sauce
1 Lime (juice)
7 ozs Glass noodles
To garnish
3 Tbsps chopped cilantro

1 Cutting board, 1 Small knife, 1 Toaster, 1 Small bowl, 1 Tablespoon, 1 Knife, 1 Sieve, 1 Plate, 1 Baking sheet, 1 Parchment paper, 1 Fork

Preparation steps

Toast the peanuts in a dry frying pan and set aside.

Heat the oil and gently cook the chilli, garlic and ginger for 3- 4 minutes until softened.

Increase the heat and add the shrimps, then pour in the fish stock and simmer for 4 minutes. Season with salt and pepper and add the chilli powder, soy sauce, oyster sauce and lime juice.

Pour boiling water over the glass noodles and leave to stand for 5 minutes. Drain, rinse with boiling water and drain again.
5.
Stir the noodles into the shrimp sauce. Garnish with the chopped coriander and toasted peanuts.
