½ tsp salt
1 Tbsp finely grated lemon zest
2 Tbsps lemon juice
½ cup unsalted butter
1 cup sugar
1 egg
1 tsp vanilla extract
For the glaze
2 cups powdered sugar
2 Tbsps finely chopped Candied lemon
0.333 cup lemon juice

1 Bowl, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Peeler, 1 Whisk, 1 Mortar, 1 Grilling tongs, 1 Grill, 1 Salad spinner, 1 Citrus juicer

Preparation steps

For the biscuits: heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 baking trays with non-stick baking paper.

Mix together the flour, bicarbonate of soda, salt and lemon zest and set aside.

Beat together the butter and sugar in a mixing bowl until light and fluffy.

Add the egg, vanilla, and lemon juice and beat until combined. Beat in the flour mixture.
5.
Drop tablespoons of the mixture 2.5cm|1" apart on the baking trays.
6.
Bake for 15-20 minutes, until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
7.
For the glaze: sift the icing sugar into a bowl and whisk in the lemon peep and lemon juice until thick enough to coat the back of a spoon.
8.
Drizzle over the biscuits and leave to set.
