- ¼ cup butter
- 1 Tbsp olive oil
- 4 Chicken legs (or 8 drumsticks)
- 2 cloves garlic cloves (finely chopped)
- 1 onion (finely chopped)
- 1 Tbsp Corn starch
- 1 bottle Red wine

- 7 ozs button Mushrooms

Preparation steps
1.
Heat the butter and oil in a large frying pan and fry the chicken until lightly browned on both sides. Remove from the pan and set aside.

Add the garlic, onion and mushrooms to the pan and cook for about 5 minutes until softened. Stir in the cornflour.

Add the chicken, pour in the wine and enough chicken stock to cover the chicken. Add the bouquet garni.

Bring to a boil, then simmer for 30-40 minutes until the chicken is tender. Remove the chicken and keep warm.

Cook the sauce over a high heat for a few minutes until the liquid has reduced. Return the chicken to the pan. Discard the bouquet garni and season to taste with salt and pepper.
6.
Garnish with oregano, thyme and rosemary.
