For the dough
½ cube Yeast (21 grams or 3/4 ounce)
1 pinch sugar
400 grams Pastry flour
4 Tbsps olive oil
1 tsp Sea salt
For the topping
300 grams diced Tomatoes (canned)
1 tsp dried oregano
Sea salt
peppers
1 handful Arugula
250 grams crayfish (cooked, ready to serve)
2 Tbsps Pine nuts
100 grams grated Cheese

Preparation steps

1.

For the dough, crumble yeast in a bowl. Stir in sugar and about 200 ml (approximately 1 cup) of lukewarm water until smooth. Add flour, olive oil and salt and knead into a smooth dough. Cover and let rest for about 1 hour in a warm place.

Preheat oven to 240°C (approximately 450°F) with a baking sheet.

Mix tomatoes with oregano and stir. Season with salt and pepper. Rinse, trim and dry arugula. Mix with crayfish tails and pine nuts.

Divide dough into 4 portions and shape into balls. Roll out into circles on a floured work surface and place on baking paper. Spread tomato mixture on top, leaving a border measuring 1-2 cm (approximately 1/2 inch). Sprinkle with cheese and drizzle with olive oil.

5.

Carefully place pizzas on hot baking sheet and bake until golden brown, about 10-15 minutes.

6.

Remove from oven, top with arugula mixture, season lightly with salt and pepper and serve immediately.
