- 5 ozs Spaghetti
- 1 cup crayfish (or large prawns)
- 1 Tbsp butter
- ½ onion (peeled and finely chopped)
- 1 clove garlic cloves (peeled and finely chopped)
- 1 Tomato (washed, deseeded and diced)
- ¼ cup cream (at least 30% fat)
- ¼ cup low-fat Crème fraiche
- ½ cup ramp ((or fresh basil)

1 Small knife, 1 Large knife, 1 Cutting board, 1 Non-stick pan, 1 Teaspoon, 1 Slotted spatula, 1 Tablespoon, 1 Paper towel
Preparation steps
1.
Cook the pasta in plenty of boiling, salted water until al dente according to the packet instructions.
2.
Meanwhile, heat the butter in a wide pan and sweat the onion and garlic until soft.
3.
Add the tomato, stir in the cream and season with salt and pepper. Bring to a gentle boil then add crayfish or prawns and the creme fraiche.
4.
Stir gently until the sauce is warmed through then add the wild garlic or basil.
5.
Drain the pasta, mix with the sauce and serve.
