- For the croutons
- 3 thick Bread
- 2 cloves garlic cloves (crushed)
- 4 Tbsps Oil
- For the salad
- 4 boneless Chicken breasts (thickly sliced)
- 1 Romaine lettuce
- For the dressing
- 1 clove garlic cloves (crushed)
- 1 tsp lemon juice
- ½ tsp English mustard
- 1 tsp Worcestershire sauce
- 2 egg yolks
- ⅜ cup olive oil
- 1 pinch sugar
- 2 Tbsps grated Parmesan
- 1 Anchovy fillet
- salt

- To garnish
- 3 Tbsps grated Parmesan
Preparation steps

For the croutons: rub the bread with the garlic. Heat half the oil in a frying pan and fry until crisp and golden. Drain on kitchen paper.

Heat the remaining oil and fry the chicken until golden and cooked through. Set aside to cool.

For the dressing: whisk all the ingredients together until thick. Season to taste with salt and pepper.

For the salad: arrange the lettuce leaves in serving bowls. Scatter over the croutons and chicken.
5.
Drizzle over the dressing and garnish with grated Parmesan cheese.
