- 4 Tbsps sunflower oil
- 4 Chicken breasts (skinned and cut into chunks)
- 2 onions (finely chopped)
- 3 cloves garlic cloves (chopped)
- 2 tsps ground Cumin
- ½ tsp cayenne pepper
- 1 tsp ground ginger
- 1 tsp ground cilantro
- 1 tsp Turmeric
- ⅔ cup Almond flour
- 2 cups Chicken broth
- ½ cup Yogurt
- 1 cup sliced almonds
- 1 tsp Saffron
- 2 Tbsps Sesame seeds (lightly toasted in a dry pan)
Preparation steps

Heat the oil in a wide pan and fry the chicken pieces for 5 minutes or until lightly browned all over. Remove from the pan and keep warm.

Gently fry the onions in the pan until softened but not brown then stir in the garlic and spices. Cook for 2 minutes, stirring all the time.
3.
Add the ground almonds and chicken broth, season with salt and pepper then add the chicken and simmer very gently for 20 minutes.
4.
Add the yoghurt and flaked almonds and simmer very gently for 5 more minutes.
5.
Serve the soup in warmed bowls with the saffron threads and sesame seeds sprinkled over.
