3 Tbsps unsalted butter
1 clove garlic cloves (crushed)
3 Tbsps all-purpose flour
1 pinch salt
¼ tsp freshly ground Nutmeg
freshly ground Black pepper (to taste)
1 ½ cups heavy cream
3 cups frozen, chopped Spinach (thawed and drained)
½ cup Parmesan (freshly grated; plus extra for garnish)

Preparation steps

1.
Cook pasta in salted boiling water according to package directions or until al dente.
2.
While pasta is cooking, melt butter in a large skillet over medium heat. Add garlic and saute until fragrant, about 1 minute. Stir in flour, salt, nutmeg, and pepper; stirring until smooth. Gradually pour in heavy cream, stirring continuously. Bring to a boil, cook; stirring for one minute. Add in the spinach (make sure all the water is drained from the spinach); stir and cook for 1 minute longer or until the spinach is warmed through. Sauce will thicken as it cooks.
3.
Remove from heat; stir in the Parmesan cheese.

Drain cooked pasta and return pasta to pot. Pour the sauce over the pasta; stirring until the pasta is well coated.
5.
Divide between bowls. Sprinkle with additional Parmesan cheese; if desired. Serve.
