Peel and chop onion. Rinse broccoli and zucchini. Cut zucchini into cubes. In a saucepan, fry onion in margarine until softened. Add zucchini and broccoli and fry briefly. Add broth, bring to a boil and simmer about 15 minutes.

Puree soup and stir in 60 ml (approximately 1/4 cup) soy creamer. Bring briefly to a boil and season with salt and nutmeg. Ladle soup into small bowls. Drizzle with remaining soy creamer and sprinkle with chives.
