- 8 slices Sandwich bread
- 1 scoop Buffalo mozzarella (250 grams, alternatively normal mozzarella)
- 4 Anchovy fillet
- 2 eggs
- 250 milliliters milk
- 50 grams Pastry flour (to tack)
- salt
- freshly ground peppers
- 250 milliliters olive oil (for frying)
Preparation steps

Remove crust from bread, cut into thin slices and lightly toast. Drain mozzarella and cut into 1 cm (approximately 1/2 inch) cubes. Drain anchovies and cut into quarters.

Beat eggs in a deep dish. Pour milk in a shallow dish. Place flour in a shallow dish.

Turn mozzarella cubes in egg mixture, drain and season with salt and pepper. Coat with flour. Briefly dip bread in milk. Arrange mozzarella cubes and anchovies on half of bread slices, cover with remaining bread slices and press lightly. Cover filled bread on both sides with remaining egg, then coat with flour.

Heat olive oil in a large skillet. Fry stuffed breads over medium heat for approximately 4 minutes per side until nicely browned. Place breads on paper towel, degrease and serve hot.
