- 2 carrots (grated)
- 2 scallions (sliced into fine rings)
- 1 handful Bean sprout
- 1 tsp chopped, fresh ginger
- 2 Tbsps Shredded coconut
- 2 Tbsps Coconut cream
- 2 Tbsps soy sauce
- Chili powder
- 20 Wonton wrapper
- Coconut oil (for deep frying)
Preparation steps

Mix together the carrots, spring onions, bean sprouts, ginger, grated coconut and coconut cream, and season to taste with soy sauce and chilli.

Place 1 tsp of mixture in the centre of each wonton wrapper. Brush the edges with water, raise up and shape into a pouch. Press together well, twisting slightly.
3.
Heat the oil in a high-sided pan or deep fat fryer to 180°C | 350F. Fry the wontons in batches for 3-4 minutes per batch. Drain on kitchen paper and serve.
