1 cup Rice flour
Turmeric
1 egg yolk
1 tsp fresh cilantro (chopped)
1 bunch Arugula
lemons (to garnish)
16 Prawn (ready-to-eat)
Oil (for frying)
Chili sauce (if desired)

Preparation steps

1.
Mix the flour with a pinch of turmeric, the egg yolk and approx. 200 ml cold water and stir into a smooth batter. Add the coriander and some sea salt. Cover and chill for approx. 30 minutes.
2.
Arrange the rocket and the lemon slices decoratively on plate.
3.
Drag the prawns through the batter and fry in hot oil for approx. 2 minutes until golden brown.
4.
Pat dry with kitchen paper, then skewer onto kebab sticks and arrange on top of the rocket. Serve drizzled with chilli sauce.
