Cucumber and Tomato Appetizers with Crayfish

- 125 grams Quark
- 12 Cherry tomatoes
- 100 grams Goat cheese
- 1 Cucumber
- 30 grams shrimp
- 5 Radish
- 1 shallot

Preparation steps
Rinse the tomatoes, pat dry and cut the tops off, forming a lid. Remove the seeds and juice with a spoon. Drain the tomatoes with the opening downwards.
Meanwhile, rinse the cucumber, then pat dry. Cut the cucumber into 12 equal slices and hollow with a spoon.
Rinse the shrimp, pat dry and finely chop. Rinse the radishes and dry, cut 2 of them into 6 columns, then chop the rest finely. Peel the shallot and chop.
Pour the drained quark into a bowl, add the chopped crayfish, radishes and shallots and mix well. Season with salt and pepper and spread on the slices of cucumber. Garnish with radish strips.
Season the inside of the tomatoes with pepper and herb salt. Mold the goat cheese into 12 balls and press into each tomato. Rinse the basil leaves, pat dry and garnish the tomatoes. Arrange the appetizers on a platter and serve.
