2 Tbsps vegetable oil
2 Chicken breasts (skinned and cut into cubes)
1 onion (finely chopped)
1 Tbsp Curry powder
½ tsp ground cinnamon
2 tsps Garam Masala
2 large potatoes (peeled and chopped)
2 large carrots (peeled and chopped)
3 cups vegetable stock
4 Tbsps Yogurt
mint (roughly chopped)

Preparation steps

1.
Heat the oil in a wide pan and fry the chicken pieces until lightly browned. Remove the chicken from the pan and set aside.
2.
Gently fry the onion until soft then stir in the curry powder, cinnamon and garam masala. Cook for 1 minute then add the potatoes and carrots. Coat the vegetables in the oil then pour in the stock.
3.
Bring to a boil, season with salt and pepper then simmer gently until the vegetables are tender. Add the chicken and cook for 5 minutes or until the chicken is cooked through.
4.
Serve in warmed bowls garnished with the yoghurt and mint.
