- 1 Tbsp Ghee
- 1 onion (diced)
- 1 Tbsp Curry powder
- 1 tsp Turmeric
- 1 small, fresh Pineapple (diced, 1/3 set aside)
- 1 Apple (sliced)
- 1 Banana (sliced)
- 4 Tbsps Coconut milk
- 2 cups Chicken broth
- 1 cup milk
- 1 Chicken breast (diagonally sliced)
- 4 Tbsps almonds (chopped and roasted)
- Naan (to serve)
Preparation steps

Heat the ghee and fry the onions. Add the curry powder and turmeric and cook for 10 minutes.

Add the fruit and fry quickly together. Add the coconut milk, stock and the milk, bring to a boil and simmer for approx. 15-20 minutes.
3.
Remove from the heat and puree with a hand blender.
4.
Add the chicken and the remaning pineapple to the soup and simmer for a further 3-4 minutes. Season with salt.
5.
Bake the naan bread according to the directions on the packet. Pour the soup into bowls, sprinkle with almonds and serve with the naan bread.
