- 4 Tbsps Oil
- 1 onion (finely chopped)
- 4 cloves garlic cloves (finely chopped)
- 1 Tbsp tomato puree
- 1 tsp Cumin powder
- 1 tsp Coriander
- 1 tsp Turmeric
- ¼ tsp Chili powder
- ¼ tsp Garam Masala
- ¼ tsp salt
- 16 ozs Roast turkey (chopped)
- 1 tsp grated ginger
- 1 tsp lemon juice
- 1 ⅔ cups Coconut milk
- For the garnish
- cilantro
Preparation steps

Heat 3 tablespoons of the oil in a pan and cook the onion and garlic until lightly browned.

Mix together the remaining oil, tomato puree, spices and salt to form a thick paste. Stir the paste into the onion mixture and cook for 30 seconds.

Stir in the turkey and cook for 1 minute.

Add the coconut milk and simmer for 3-4 minutes until piping hot. If the mixture is too thick, add a little hot water. Stir in the ginger and lemon juice.
5.
Garnish with coriander and serve with boiled rice.
