600 grams raw shrimp (peeled and deveined)
3 Tbsps cilantro (finely chopped)

3 Tbsps Rice flour
3 Tbsps Shredded coconut

Preparation steps

Mix the tempura flour with about 50 ml (approximately ¼ cup) water. Allow it to plump and swell.

For the balls, rinse and trim the scallions and chop finely. Peel the garlic cloves and chop finely. Rinse, trim and remove seeds from the chile pepper and chop finely. Rinse the shrimp in cold water, drain in colander, place on paper towel, pat dry and finely chop.

Now mix the chopped shrimp with the scallions, garlic, chile pepper and 2 tablespoons cilantro in a bowl. Season with salt and pepper. Add egg and rice flour as required to knead a well-moldable mass.

Form small balls out of the mixture, dip in tempura batter and deep fry in batches in hot oil until golden brown for 2-3 minutes. Drain on kitchen paper and serve with mango chutney as desired.
