- 3 cups all-purpose flour
- 1 Tbsp Baking powder
- ¾ cup caster sugar
- ½ cup unsalted butter (melted)
- 2 large eggs
- ⅞ cup milk
- 1 cup fresh Raspberries
- To decorate
- 36 fresh Raspberries
- powdered sugar
Preparation steps
1.
For the muffins: heat the oven to 200°C (180° fan) 400°F gas 6. Place paper cases in a 10 hole muffin tin.

Sift the flour and baking powder into a mixing bowl. Add the sugar.

Whisk together the butter, eggs and milk. Pour into the dry ingredients and stir until just combined.
4.
Stir in the raspberries.
5.
Spoon the mixture into the paper cases and bake for 15-20 minutes until golden. Cool in the tin for a few minutes, then place on a wire rack to cool completely.
6.
Place 3 raspberries on each muffin. Sift over the icing sugar.
