Ingredients

For the cake
1 cup butter
2 ½ cups caster sugar
4 eggs (beaten)
1 cup milk
3 cups all-purpose flour
2 ½ Tbsps Baking powder
½ tsp salt
1 tsp vanilla extract
2 cups Shredded coconut
For the filling and covering
2 cups full-fat, soft Cheese
½ cup unsalted butter
8 cups powdered sugar
1 ripe Mango (peeled and diced)
For the mango bunnies
2 Mangoes
To decorate
green and yellow Candy

Preparation steps

1.
For the cake: heat the oven to 180°C (160° fan) 350°F gas 4. Grease and line the bases of 3 x 23cm|9" cake tins.

Beat the butter and sugar in a mixing bowl until light and creamy.

Gradually beat in the eggs and milk, alternately with a spoonful of flour, until blended.

Sift in the remaining flour, baking powder and salt and mix well. Gently stir in the vanilla and coconut.

Spoon into the tins and bake for 25-30 minutes until golden and springy to the touch. Cool in the tins for 10 minutes, then place on a wire rack to cool completely.

Beat the cheese and butter with an electric whisk until thick and creamy. Sift in the icing sugar and stir until well combined. Add the mango and gently stir, then chill until needed.
7.
Use about half the icing to spread on top of each cake and stack the cakes to make one 3 tiered cake. Place on a serving plate and spread the remaining icing over the top and sides of the cake.
8.
For the mango bunnies: peel and thinly slice the mangoes. Using a small bunny-shpaed cutter or card stencil cout out bunny shapes from the slices. Arrange around the top of the cake, with a candy next to each bunny.
9.
Decorate with candies around the base of the cake.
