- 35 ozs Mangoes (peeled and diced)
- 3 ⅛ cups light brown sugar
- 2 tsps Coriander
- ½ tsp cayenne pepper
- 1 tsp ground Turmeric
- ½ tsp ground cloves
- 4 ozs stem ginger (finely chopped)
- 3 ½ cups white wine vinegar
- 2 onions (finely chopped)
- 1 Tbsp finely chopped cilantro
- To garnish

To sterilise jars: sash the jars in hot soapy water, rinse very well and put in a low oven for 15-20 minutes until warm and completely dry. Sterilise the lids in boiling water for 10 minutes, keeping the lids in the hot water until ready for use, then dry with kitchen paper.
Preparation steps

Put the mangoes and sugar in a bowl. Stir well, cover and leave to stand overnight.

Put the mangoes and their syrup with the remaining ingredients into a large pan and bring to a boil, stirring.

Reduce the heat and simmer gently, stirring occasionally for 2 1/2 -3 hours until thick and the liquid has almost evaporated. Remove from the heat and leave to stand for 15 minutes.
4.
Ladle into into hot sterilised jars, cover, seal and label. Garnish with coriander to serve.
