- ½ cup sugar
- 2 eggs (beaten)
- ⅔ cup self-rising flour
- ½ tsp Baking powder
- 1 tsp vanilla extract
- For the frosting
- 1 ½ cups powdered sugar
- 2 Tbsps lemon juice
- 1 tsp hot water
- pink Food coloring
- Decoration
- pink and white sugar sprinkles

Preparation steps
1.
Heat the oven to 350ºF/180ºC/Gas 4/ Place paper cases in a 12 hole bun tin.

Cream the butter and sugar in a mixing bowl until light and creamy.
3.
Add the eggs gradually, beating well. Sift in the flour and baking powder and gently fold into the mixture. Stir in the vanilla.

Spoon into the paper cases to half fill them. Bake for 12-15 minutes until springy to the touch. Place on a wire rack to cool.
5.
For the icing: Sift the confectioners’ (icing) sugar into a bowl and gradually stir in the lemon juice and water until smooth.
6.
Put half the icing (frosting) in another bowl and add a few drops of food colouring.
7.
Spoon a little frosting (icing) on each cake and smooth level with a palette knife. Decorate with pink and white sprinkles. Leave to set.
