1 Apple
1 shallot
3 Tbsps Mayonnaise
2 Tbsps sour cream
1 tsp sharp Mustard

1 Tbsp vegetable oil
1 tsp honey
2 Tbsps raisins

Preparation steps

Rinse the savoy cabbage leaves and blanch in a pot of boiling salted water until al dente, 3-4 minutes. Rinse under cold water, pat dry and cut out 8 circles each about 8 cm (approximately 3-inches) in diameter.

Rinse the green cabbage, remove the core and cut or slice into thin strips. Blanch in a pot of boiling salted water until crisp-tender, 2-3 minutes. Peel the carrot and finely grate. Peel and core the apple and finely grate. Peel and finely chop the shallot. In a bowl, stir the mayonnaise with sour cream and mustard until smooth. Season with lemon juice, salt and pepper and stir in the cabbage, carrot, shallot and apple. Covered iand refrigerate at least 2 hours.

Meanwhile, rinse the chicken, pat dry and cut into cubes. Season with salt and pepper. Heat the oil in a skillet and saute the chicken until golden brown, about 2 minutes. Finally, mix in the honey and remove from the heat. Season the salad again.

To serve, place an 8 cm (approximately 3-inch) metal ring in the middle of each plate, lay one circle of the savoy cabbage in the ring and fill with the salad. Finish with another cabbage leaf and remove the rings. Sprinkle the raisins over and serve with the chicken cubes.
