Ingredients

For the biscuits
½ cup unsalted butter
½ cup caster sugar
1 egg (lightly beaten)
1 tsp vanilla extract
2 ½ cups all-purpose flour
For the filling
9 Lemon curd
1 tsp lemon juice
For the icing
2 ½ cups powdered sugar
2 Tbsps water
yellow Food coloring
To decorate

Preparation steps

1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Line a large baking tray with non-stick baking paper.

Beat the butter and sugar in a mixing bowl until soft and creamy. Gradually beat in the egg and vanilla. Add the flour and mix to a dough.
3.
Roll out the dough on a lightly floured surface to a thickness of 1 cm|1/2". Using a rabbit-shaped cookie cutter, cut biscuits out of the dough and place on the baking tray.

Bake for 8-10 minutes, until pale golden brown. Cool on the baking tray for 5 minutes, then place on a wire rack to cool completely.

For the filling: mix together the lemon curd and lemon juice. Sandwich the biscuits in pairs with the lemon filling.
6.
For the icing: sift the icing sugar in to a bowl and stir in the water and yellow colouring. Spread the icing on both sides of the filled biscuits. Placea sliver ball on each rabbit for the 'eyes' and leave to set.
