Ingredients

2 Tbsps Yeast
2 tsps Dried yeast
3 cups flour
1 tsp salt
For the filling
12 cups Spinach
1 bunch scallions (cut in to rings)
½ tsp Caraway
1 ½ cups Feta (crumbled)
4 Tbsps olive oil
Cumin
1 organic lemon (zest grated)
Lemon wedge (to serve)

Preparation steps

1.
To make the dough mix the yeast with approx. 200 ml lukewarm water. Stir in the flour and salt to form a smooth dough. Cover and leave to rise in a warm place for around 45 minutes.
2.
Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and line a baking tray with grease-proof paper.
3.
Blanch the spinach in boiling salt water for a few seconds. Rinse, wring out and chop roughly.
4.
Mix together the spinach and the spring onions and season with salt, ground black pepper and caraway seeds. Stir in the feta.
5.
Knead the dough on a floured work surface and split in to eight portions. Roll each portion into an oval and shape into a boat. Press the ends together firmly.
6.
Spoon the filling into the boats and drizzle with olive oil and sprinkle with the black cumin and lemon zest. Place the boats on the prepared baking tray and bake for around 15 minutes. Serve with lemon wedges.
