1.
Heat the oil in a frying pan and cook the kippers for 3 minutes on each side. Keep warm.

Heat the grill.

Toast the muffins until golden. Spread with half the butter and set aside.
4.
Break the eggs into a pan and add the milk, salt and remaining butter. Cook over a medium heat, whisking all the time until the eggs are scrambled.
5.
Place the muffin halves on serving plates. Spoon the scrambled egg and kippers on top and garnish with chives and spring onion.
