- light, olive oil non-stick cooking spray
- 2 medium Eggplant (sliced)
- 1 cup ready-made Tomato sauce (or tomato puree)
- 2 tsps dried oregano
- 12 cherry Tomatoes (halved)
- 1 ⅔ cups Goat cheese (cubed)
- fresh oregano (to garnish)
- salt
- freshly ground peppers

Preparation steps
1.
Heat the oven to 220ºC (200º fan) 425ºF, gas 7. Line a baking tray with non-stick baking paper.
2.
Spray a large frying pan with oil and fry the aubergine slices until they are starting to brown. Add a little more oil during cooking if needed.
3.
Place the pita breads on the baking tray and spread with the tomato sauce. Sprinkle over the dried oregano and season with salt and pepper.
4.
Lay the aubergine slices and halved tomatoes on top of the sauce and bake for 10 minutes.
5.
Scatter over the cheese and serve garnished with the fresh oregano.
