1 kilogram Roasted pork (with rind)
vegetable oil
300 grams carrots
300 grams small white Beets
400 grams small potatoes
salt
freshly ground peppers
1 garlic clove
150 milliliters dry white wine
250 milliliters Beef broth
½ bunch parsley
4 Sage
cornstarch (to thicken)

Preparation steps

Preheat oven 200°C (approximately 400°F) and grease roasting pan with oil.

Rinse pork and pat dry. Cut rhombus pattern into rind. Peel and finely chop garlic cloves. Rub pork with garlic, salt and pepper. Peel carrot and cut into large strips. Rinse turnips, remove greens and halve turnips. Rinse potatoes thoroughly. Place pork rind-side up in roasting pan and let brown slightly in oven for about 1 hour.

Add vegetables to roasting pan, pour in wine and some broth and braise for 1 hour in oven. Pour pan juices over rind from time to time and add a little broth as needed. Add parsley and sage leaves during last 30 minutes of cooking. If necessary, increase oven temperature at end of cook time to brown rind.

To serve, remove herbs and thicken pan juices to taste with cornstarch dissolved in cold water.
