- 400 grams cooked Long grain rice
- 1 Tomato
- 100 grams green Beans
- 1 chili pepper
- 1 Tbsp dried, italian Fresh herbs
- 1 shallot (chopped)
- 2 scallions
- 1 carrot
- 1 tsp Curry
- 2 Tbsps vegetable oil
- Light soy sauce
- garnish
- 1 cooked egg (peeled)
- Coriander
Preparation steps

Blanch tomato in hot water, rinse in cold water and peel. Quarter and remove seeds, cut into cubes.

Rinse and trim beans, cut into 3 cm (approximately 1 inch) long pieces. Blanch in salted water for about 6-8 minutes or until al dente.

Cut chile pepper into very thin rings.

Rinse and dry scallions, cut into fine rings.

Peel and slice carrot.
6.
Heat oil in a pan and saute carrot, beans and scallions for a few minutes. Add diced tomato and shallot and saute briefly. Add rice and saute, stirring, for 2 minutes. Season with soy sauce, place into 2 bowls and garnish each with half of an egg and cilantro. Serve.
