Ingredients

For the cake
6 egg whites
cup sugar
6 egg yolks
1 tsp vanilla extract
1.333 cups plain flour
1 tsp Baking powder
For the vanilla frosting
1 ⅛ cups unsalted butter
4 cups powdered sugar
1 tsp vanilla extract
2 Tbsps cream
For the decoration

Preparation steps

1.
For the cake: heat the oven to 180C, 350F, gas 4. Grease and line a 24 cm|9" round springform cake tin.

Whisk the egg whites with the sugar until stiff. Stir in the egg yolks and vanilla until blended.

Sift in the flour and baking powder and stir gently until incorporated.

Spoon into the tin and bake for 30 -40 minutes until springy to the touch and golden. Cool in the tin for 5 minutes, then place on a wire rack to cool.

For the vanilla frosting: cream the butter in a mixing bowl until soft. Sift in the icing sugar, a quarter at a time, beating well after each addition. Beat in the vanilla and cream and continue beating until light and fluffy.

Cut the cake horizontally through the middle with a bread knife. Spread some of the vanilla frosting on 1 half and place the other cake half on top.
7.
Spread the remaining frosting over the top and sides of the cake, swirling with a palette knife into rough peaks. Chill for at least 30 minutes before serving. Decorate with candles to serve.
