- 2 ¼ cups self-rising flour
- 1 tsp Baking powder
- 1 tsp ground cinnamon
- ½ cup caster sugar (scant)
- 2 eggs
- ½ cup milk
- 4 Tbsps sunflower oil
- 2 Apple (peeled and grated)
- 1 cup whole-grain granola
Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Line a 12-hole muffin tin with paper cups or cases.

Mix together the flour, baking powder, cinnamon and sugar in a mixing bowl.

Whisk together the eggs, milk and oil. Pour into the dry ingredients and mix until just combined, then stir in the grated apples.
4.
Spoon the mixture into the paper cases and sprinkle over the granola.
5.
Bake for 20-25 minutes until the muffins are well risen and firm. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
