- Coconut ice cream
- 1 ⅔ cups Coconut milk
- ⅜ cup cream (30 % fat)
- 5 Tbsps Coconut syrup (or to taste)
- 4 Tbsps Coconut liqueur
- Banana fritters
- 1 cup all-purpose flour
- ⅔ cup Rice flour
- ⅜ cup Coconut milk
- 1 egg white
- 1 tsp baking soda
- 1 pinch salt
- 2 Tbsps brown sugar
- 4 firm Banana (peeled, halved)
- Fat (for deep-frying)
- To garnish
- 4 sprigs mint

1 Sieve, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Teaspoon, 1 Juicer oder Standmixer, 1 Bowl
Preparation steps

For the ice cream: mix all the ingredients, transfer to an ice cream maker and freeze. (If you do not have an ice cream maker: mix the ingredients, put into a shallow container and put into the freezer. Freeze, whisking well every 30 minutes).

For the banana fritters: mix the flours and beat smoothly with approximately 100 ml/1/2 cup cold water. Stir in the rest of the ingredients (apart from the bananas). Add a little more water if the batter is too stiff.

Dip the bananas in the batter. Fry in hot fat in a deep-fat fryer until crisp. Lift out with a skimmer or slotted spoon and drain on kitchen roll.
4.
Serve on pieces of pineapple with coconut ice cream and fresh coconut. Garnish with mint sprigs.
