2 Tbsps olive oil
4 Chicken drumstick
1 onion (peeled and chopped)
1 green Bell pepper (seeded and chopped)
1 stick Celery (finely chopped)
2 cloves garlic cloves (finely chopped)
1 Tbsp flour
1 tsp paprika
1 ⅔ cups Coconut milk
½ cup chicken stock
1 bay leaf
2 Banana (peeled and chopped)
cilantro (chopped)
salt

Preparation steps

1.
Heat the oil in a large pan and cook the drumsticks on all sides until golden then remove and set aside.
2.
Sauté the onion, peppers and celery until softened.
3.
Add the garlic and flour and cook out for a few seconds, then add the chicken back to the pan.
4.
Sprinkle over the paprika, then pour in coconut milk and stock. Add the bay leaf and season, then simmer for about 20 minutes over a low heat until the sauce has thickened and the chicken is cooked.
5.
5 minutes before the end of cooking, add the bananas to heat through. Serve sprinkled with coriander
