50 grams melted m butter
1 ½ Tbsps Molasses
100 grams cane sugar
1 egg yolk
180 grams Pastry flour
1 tsp Baking powder
1 tsp ground ginger
½ tsp cinnamon (ground)
¼ tsp allspice (ground)
1 pinch salt
50 grams candied ginger (finely chopped)
For decoration
30 grams powdered sugar
2 Tbsps sugar

Preparation steps

Preheat the oven 180°C (approximately 350°F). Line a baking sheet with parchment paper. In a bowl, mix together the butter, molasses, sugar and egg yolk. In a separate bowl, stir together the flour, baking powder and spices. Stir the flour mixture into the butter mixture until combined. Drop the dough by teaspoonfuls, 2 inches apart onto the baking sheet. Bake until the cookies are set and the tops spring back when lightly touched, about 12 minutes.

Remove the cookies from the baking sheet and transfer to a wire rack to cool.  In a small bowl, stir togther the powdered sugar and  2 teaspoons of water, spoon into a freezer bag and snip off a small corner. Decorate cookies with the powdered sugar icing and sprinkle with sugar, let dry before serving.
