Gingerbread

- 700 grams honey
- 200 grams sugar
- 200 grams butter
- 2 eggs
- 2 Tbsps Lemon peel
- 2 Tbsps cocoa powder
- 1 tsp cinnamon
- 1 tsp cloves (ground)
- 1 tsp Cardamom (ground)
- 1 tsp Nutmeg (ground)
- 1 tsp allspice (ground)
- 1 tsp cilantro (ground)
- 1 tsp ginger (ground)
- 1 tsp potatoes
- 1 tsp Ammonium carbonate (ammonium carbonate)
- 1 kilogram Pastry flour
Preparation steps
In a saucepan, heat honey, sugar, and butter on medium heat stirring constantly until the sugar has completely dissolved. Let cool until mixture is slightly warm.
Add egg, lemon zest, cocoa, and spices. Dissolve potash and ammonium carbonate in 1 tablespoon water. Mix together with the flour and honey mixture. Knead to form a firm dough.
Wrap the dough in foil and let rest at room temperature for one day.
Knead the dough again. Cut in half and roll 2 mm (1/10 inch) thick. Each half should be about 35 x 45 cm (approximately 14 x 18 inches). Place on a greased and floured baking sheet.
Bake in a preheated oven (180°C) (approximately 350°F) for about 15-20 minutes. Remove and let cool on the sheet.
From a sheet of dough, a gingerbread house can be prepared (with a base of 30 x 40 cm) (approximately 12 x 16 inches) using the accompanying drawings.
From the second sheet, ornaments, roof shingles, doors, windows etc. can be made. Use your imagination to come up with original designs. "Glue" the individual pieces with thick frosting (powdered sugar and some water).
