80 grams Glass noodles
500 grams raw, unpeeled shrimp
1 pc Galangal (about 10 cm)
1 Lemongrass
3 Lemon leaves
2 cilantro
3 shallots
4 garlic cloves
1 dried Pepperoncini
250 milliliters fish stock
3 Tbsps Fish sauce
4 Tbsps Lime juice
1 Tbsp sugar

Preparation steps

Soak glass noodles for 5 minutes in warm water. Cut with scissors at about 15 cm (approximately 6 inches) long pieces and leave to drain in a colander. Peel shrimp, rinse, cut along the back and remove the intestines.

Squeeze galangal and lemongrass slightly until the flavor is perceived. Rinse lemon leaves, pat dry and chop coarsely. Rinse cilantro branches, shake dry, pluck leaves and cut coarsely. Peel shallots and garlic, coarsely chop. Cook the dried pepper in a wok without fat, until all smells strongly. Remove from the wok and crush in a mortar. Heat the fish stock in a wok. Add all ingredients except shrimp, glass noodles and cilantro to the wok and cook for 1 minute. Add glass noodles and scampi and leave to cook 1 to 2 minutes. Remove galangal and lemongrass, season to taste and serve garnished with cilantro.
