- 5 egg yolks
- 1 egg
- ½ cup caster sugar
- 3 Tbsps Corn starch
- 2 cups cream (48% fat)
- ¾ cup Champagne
- 1 tsp vanilla extract
- 1 Tbsp butter
- To decorate
- 4 tsps caster sugar
- edible, gold Glitter

Lightly butter 4 ramekins.

Whisk together the egg yolks, whole egg, sugar and cornflour.

Heat the cream, champagne and vanilla in a pan and bring to a boil. Remove from the heat.

Slowly whisk about 100ml|1/2 cup of the hot cream mixture into the egg mixture, whisking constantly.
5.
Add the egg mixture to the cream mixture in the pan and cook over a low heat, whisking until thickened.

Whisk in the butter. Strain into the ramekins, cool, then chill until set.
7.
Just before serving, sprinkle each ramekin evenly with 1 teaspoon of sugar. Use a cook's blowtorch to melt and caramelize the sugar. Sprinkle with glitter and serve immediately.
