- 1 cup dairy-free margarine
- ¾ cup light brown sugar
- 1 cup honey
- 2 ¾ cups gluten-free self-rising flour
- 2 tsps gluten-free Baking powder
- 2 tsps Ginger powder
- 1 tsp ground cinnamon
- ¼ tsp grated Nutmeg
- 4 eggs
- 4 Tbsps Soy milk
- ¾ cup chopped Walnut
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line a 30cmx25cm|12"x9") baking tin with non-stick baking paper.

Beat together the margarine and sugar in a mixing bowl until light and creamy, then beat in the honey.
3.
Add the remaining ingredients and beat well until smooth. Pour into the tin.
4.
Bake for about 40 minutes, until firm in the centre. Remove from the oven and cool completely in the tin.
5.
Cut into squares and spoon a little honey on each square. Top with a walnut half.
