- For the tzatziki
- 1.333 cups Greek yogurt
- ½ lemon (juiced)
- 1 clove garlic cloves (minced)
- ½ large Cucumber (finely diced)

- For the toasts
- ½ large Cucumber (sliced thinly into discs)
- 24 dark Rye crackers
- 24 Ryvita Crackers
- mint
- 1 cup pitted black olives (drained)
- Black pepper
Preparation steps
1.
Prepare the tzatziki by whisking together the Greek yoghurt, lemon juice, minced garlic and finely diced cucumber in a mixing bowl until smooth. Season to taste, then cover and chill until needed.

When ready to assemble the canapés, place a slice of cucumber on top of each mini cracker.
3.
Top with a teaspoon of the tzatziki then garnish with a sprig of mint leaves and a pitted black olive.
4.
Season with black pepper and arrange the canapés on top of the dark rye crackers, using them as a platter of sorts.
