Ingredients

For the tzatziki
½ Cucumber (peeled, halved lengthways, deseeded and grated)
1.333 cups Yogurt
1 garlic clove (finely chopped)
1 Tbsp parsley (chopped)
1 Tbsp lemon juice
For the salad
4 Tomatoes (sliced)
1 onion (cut into rings)
0.333 cup black Olives (pitted)
1 Tbsp parsley (chopped)
1 cup Feta (diced)
4 leaves Iceberg lettuce
white wine vinegar
olive oil

16 lamb chops
olive oil
1 red chili pepper (cut into rings)
2 garlic cloves (finely chopped)
2 Tbsps parsley (chopped)

Preparation steps

1.
To make the tzatziki season the grated cucumber with salt and leave to steep in water for 15 minutes.

Mix together the yogurt, garlic, parsley and the lemon juice. Wring out the cucumber and stir it in. Season with salt and ground black pepper.

Mix the tomatoes, onion, olives, parsley and the feta and arrange on the lettuce leaves. Just before serving, season with salt and ground black pepper and drizzle with the vinegar and the oil.

Drizzle the meat with oil, season with salt and ground black pepper and grill on both sides for around 6 minutes.
5.
Mix the chilli, garlic and parsley with 4-5 tbsp oil. Once cooked, brush this mixture onto the chops and serve with the tzatziki and the salad.
