Greek Style Sandwich with Souvlaki and Vegetable Rice

- 200 grams Long grain rice
- salt
- 500 grams Pork (steak quality)
- 2 tsps dried oregano
- freshly ground peppers
- 1 Tbsp lemon juice
- 6 Tbsps olive oil
- 600 grams Pork (steak quality)
- 1 head Lollo Bionda
- 2 Tomatoes
- 2 red onions
- 1 yellow paprika
- ½ Cucumber
- 2 Tbsps chopped parsley
- 4 Pita bread
Preparation steps
Combine equal parts of rice and water, season with salt and bring to a boil. Cook for about 20 minutes. Meanwhile, make marinade by combining oregano, pepper, salt, lemon juice and 3 tablespoons of olive oil. Rinse and pat dry pork, cut into 2 cm (approximately 1 3/4 inches) cubes and marinate for 25 minutes. Rinse lettuce, spin dry and tear into bite-sized pieces.
Rinse tomatoes, quarter and remove stems, cut into narrow strips. Peel and halve onions, cut into fine strips. Rinse and dry peppers, halve, remove seeds and ribs, cut into 0.5cm (approximately 1/4 inch) cubes. Peel cucumber, halve, scoop out seeds and cut into 0.5 cm (approximately 1/4 inch) cubes.
Heat 1 tablespoon of oil in a pan, saute peppers and diced cucumber for 2 minutes. Add to tzatziki. Add chopped parsley to cooked rice. Thread marinated meat onto skewers and saute on hight heat on each side (3-5 minutes per side).
Place pita bread in preheated oven for about 5 minutes, remove and fold into semi-circle. Let cool for a minute. Place lettuce, tomato and onion strips onto pita, top with meat. Arrange rice on plates, top with souvlaki pita. Serve accompanied by small bowl of tzatziki.
