2 Tbsps olive oil
1 shallot (finely chopped)
1 clove garlic cloves (finely chopped)
2 cups Broccoli
2 ½ cups Vegetable broth
1 ½ cups Basil
3 Tbsps Crème fraiche
1 dash lemon juice

1 Tablespoon, 1 Teaspoon, 1 Non-stick pan, 1 Cutting board, 1 Small knife, 1 Fine grater, 1 Citrus juicer, 1 Bowl, 1 Peeler, 1 Sieve, 10 Wooden skewers

Preparation steps

Heat the oil in a pan and fry the shallot and garlic until soft. Add the broccoli and pour on the broth. Simmer for approx. 20 minutes.

Add the basil leaves, reserving a few to garnish. Puree the soup. Stir in the creme fraiche and season with salt, pepper and lemon juice.
3.
Garnish with basil leaves and serve.
