Grilled Potato-Bacon Skewers

The potatoes score points with complex carbohydrates that provide long-lasting satiety; the vitamin C from the potatoes also strengthens the body's defences. The sulphides from the onions act more or less like natural antibiotics and can render pathogens harmless.
If you prefer to enjoy these skewers vegetarian, you can replace the turkey bacon with feta, halloumi or zucchini, for example.

- 3 ½ lbs cooked, small new potatoes
- 2 onions
- 7 ozs Bacon (in slices)
- 5 Tbsps vegetable oil
- salt
- freshly ground peppers
- 2 scallions
- 2 Tbsps lemon juice
Preparation steps
Cut potatoes in half. Peel the onions, cut into quarters and cut into individual slices. Thread onions on long (soaked) wooden skewers alternating with the potatoes and folded slices of bacon stuck. Brush with oil, season with salt and pepper and cook on a preheated medium heat grill, turning frequently, about 15 minutes.
Rinse scallions, trim and cut into rings. Mix with the remaining oil, lemon juice and salt and pepper to taste.
Remove the skewers from the grill and serve drizzled with scallion vinaigrette.
