Grilled Turkey Breast with Tomato Celery Relish

- 500 grams ripe Beefsteak tomato
- 150 grams Celery
- 1 sour Apple (such as Granny Smith)
- 1 red chili pepper
- 2 cloves
- 1 tsp Mustard seed
- 3 allspice
- 2 shallots
- 1 garlic clove
- 2 Tbsps olive oil
- 1 tsp dried thyme
- 50 milliliters dry Red wine
- 4 Turkey (about 160 g)
- salt
- freshly ground peppers
- 2 Tbsps vegetable oil
- 2 Tbsps white balsamic vinegar
- sugar (to taste)
Preparation steps
Blanch tomatoes for a few seconds, drain and peel and cut into quarters and core and cut into pieces. Rinse celery, drain and cut into thin slices. Peel apple and cut into quarters and finely chop. Rinse chile peppers, cut in half lengthwise and remove seeds and ribs and cut into thin rings. Place cloves, mustard and allspice berries in cheesecloth and tie with kitchen twine.
Peel shallots and garlic and chop finely. In a saucepan, heat oil and sauté shallot, garlic, celery, chile pepper and apple for about 1-2 minutes. Add tomato, spice bag and thyme to pan and cook briefly and deglaze pan with wine. Reduce heat and simmer for about 10-15 minutes over medium heat.
Rinse turkey and pat dry and season with salt and pepper. Heat oil in a grill pan and sear on both sides. Remove spice bag from the finished tomato relish and season with balsamic vinegar, salt and sugar, to taste. Place relish in a small bowl. Arrange turkey on plates and serve with relish.
