- 600 grams Chanterelle
- 1 onion
- 4 Tbsps grapeseed oil
- salt
- freshly ground peppers
- 1 Tbsp chopped parsley
- 1 Tbsp Raspberry vinegar
- 2 Guinea fowl breast fillets
- 1 Tbsp clarified butter
Preparation steps

Wipe the chanterelles and chop as needed. Peel the onion and finely chop. Sauté the mushrooms along with the diced onion in hot oil and season with salt and pepper, chopped parsley, raspberry vinegar and rest of oil. Mix and set aside.

Season the guinea fowl with salt and pepper and saute in hot butter 3-4 minutes on each side. Let rest a few minutes, then cut diagonally into slices and arrange on the mushroom salad.
