1 tsp baking soda
1 cup unsalted butter (at room temperature)
1 cup granulated sugar
2 large eggs (lightly beaten)
2 tsps pure vanilla extract
2 Tbsps freshly grated Orange zest

Preparation steps

In a medium bowl, whisk together flour, salt and baking soda. Set aside.

In a separate large bowl, beat the butter and sugar together, until light and fluffy. Add the beaten eggs, vanilla and orange zest and beat until combined. Add the dry mixture and beat until the dough is smooth. Divide the dough in half and wrap each half in plastic wrap. Chill in the refrigerator for at least one hour or overnight.

Position oven rack in the center position. Preheat oven to 350º F, Line two baking sheets with parchment paper.

Remove dough from refrigerator and lightly flour your work surface and rolling pin. Roll dough out to a thickness of 1/4-inch. Using a lightly floured cookie cutter, cut out shapes and transfer cookies to prepared baking sheets. Chill cookies in the refrigerator for 10 minutes, this will help prevent the cookies from spreading and losing their shape.

Sprinkle the tops of the cookie dough with sanding sugar, Bake for 8 to 10 minutes or until the edges are golden brown.
6.
Cool cookies on the baking sheet for 3 to 5 minutes. Transfer cookies to a wire rack to cool completely. Serve.
